I’ll be honest with you. Sometimes problem is that takeout gets expensive really quick!
Over the last 6 months, it’s been my goal to prep freezer meals on the weekends because then during the week I only have to thaw and pop them in the oven or slow cooker – a huge time saver!
One of the easiest, but favorite meals in our household is slow cooker Chicken and Salsa. I can start it in the morning and it’s ready when I get home from work. Shout out to Shirley Voorhees for giving me this recipe several years ago!

Here’s how to make it:
- 4 Chicken breasts
- 2 cans black beans (rinsed well & drained)
- 1 can corn
- 2 cups chunky salsa
- 1 cup cheddar cheese
Mix black beans, corn and 1 cup of the salsa together in bottom of crock pot. Lay chicken breasts on top & pour 1 cup of salsa on top. Cook for 3-4 hrs on high or 6-8 hours on low until chicken is done. Remove lid and top with grated cheddar cheese. Replace lid for 5-10 minutes until cheese is melted.
